Elderberry is a fruit but why is it toxic and poisonous if eaten raw?
It is always instructed that Elderberries should be cooked and then eaten

Technically Elderberries are poison cooked or raw, its just that the poison has been broken down some and is less potent in the cooked version.
If you look at what elderberry syrup and tinctures, etc are used for you will see that they are toxic even in their cooked form, being regularly used to stop body cleaning symptoms like colds and flus and to stop the body from creating inflammation which is a body process designed to minimize cellular damage. Any substance which has the ability to stop cold or flu symptoms is stopping the body from cleaning and repairing itself and therefore is a poison.
